
A lot of us try to find a recipe for a great muffin. We all look for a muffin that is not dry, complicated, that we can play with it, is juicy and soft, that it is simply perfect. This is such a recipe, it is very easy to make, everybody can make it, and all the ingredients you should have home.
You can work them as marble cake, you can put cocoa or chocolate in them, you can put fresh or dried fruit also. The recipe is really easy to follow and believe it, you will never need another one.
This time I put bananas and coconuts in them. Who does not like this exotic combination, especially if you add some chocolate …? Fine, soft, succulent muffins when you want something sweet and fast.
I just eat one as I am writing you this.
RECEPIE
Ingredients:
- 1 ½ Cup of flour (You can use any kind you want. I used Rye flour- cup was 100ml)
- 1 tea spoon of baking powder
- 2 ripe bananas
- ½ cup of coconut oil (you can use sunflower oil or any other kind you want)
- 1 larger egg or 2 smaller ones (I used duck egg)
- 1 tea spoon of vanilla extract or vanilla sugar
- ½ cup of chocolate drops
- ¾ cup of coconut flour
Preparation:
- Heat the oven to 200oC (392oF)
- Mash the bananas
- In a bowl mix the eggs, then add mash bananas, vanilla extract, coconut oil and flour
- When you get a good blended mixture add the flour with baking powder. Lightly stir the mixture. (If your mixture is thicker, add some milk, coconut milk if you have any is better than diary.)
- Add chocolate drops
- Place the paper cups in the muffin mold and fill them with a mixture up to 2/3.
- Bake the muffins about 20-25 minutes until lightly golden. Check with a toothpick, if the mixture doesn’t stick to the toothpick the muffins are done
I got 15 muffins from this mixture. Enjoy.
These sound so perfect for spring and summer and not too difficult either. I’m not a good cook nor baker so these could be perfect for me. Thank you for sharing such a lovely recipe and I hope that it can inspire me to practice in the kitchen!
