Who’s ready to paaaarrrrttaayyyy?!?!?! …..Said no one ever on a Tuesday.
If you know me at all, you are well aware of the fact that I am coffee-obsessed. As in don’t-even-talk-to-me-until-I’ve-had-a-cup obsessed… And Over the last few years, I have become particularly fond of the iced variety. I generally like to start my day with a hot, freshly brewed cup, then it’s onto the iced stuff by the afternoon. In the summer months, iced coffee rules my world, and I love to experiment with different flavors.
Also if you know me you know that I cannot go without ice cream for very long, especially in the summer. So this recipe is a perfect for me and I hope for you too. It is basically your favorite ice cream flavor in iced coffee form! Made easy with fresh mint, almond milk, and all the chocolate you can handle!
INGREDIENTS
- 1/2 cup strong coffee, chilled
- 1 cup unsweetened vanilla almond milk
- 6 fresh mint leaves*
- 2 teaspoons sweetener of choice (I used coconut sugar)
- 1 teaspoon unsweetened cocoa powder
- shaved chocolate and/or chocolate sauce
INSTRUCTIONS
- In a small pot, heat almond milk over low heat.
- Add fresh mint leaves, and heat for 5 minutes.
- Remove from heat, and strain off mint leaves.
- Stir in sweetener and cocoa powder.
- Add ice cubes to a large glass. Pour in chilled coffee.
- Top with almond milk.
- Sprinkle with shaved chocolate and chocolate sauce if desired.
NOTES
- alternatively, add 1/8 to 1/4 teaspoon of mint extract to almond milk instead of using fresh. No heat is needed.
- Make a hot version by skipping ice & using hot coffee instead.
- Use any kind of milk you prefer. Add 1/2 teaspoon vanilla extract if not flavored vanilla.
This sounds good, wish coffee didn’t make me feel tired.

Coffee makes you tierd?! Did know people like that are areound. I am like a grasshoper on coffee. Do everything but remove the coffee 😁

This is a great recipe. I don’t like coffee, but I’m thinking I could probably leave that out because the rest sounds gorgeous!

Yes you could leave the coffee out. I made it for my kids without the coffee and they love it.

I’m not a mint fan but this looks and sounds really good. My OH would love it as he’ll have mint with just about anything 🙂
