Upside down plum cake

We are all about the plums these days. It started with a jam and it will end with me gaining a few pounds as I cook and bake everything plum. There is a recipe for the jam on the blog.

This is a simple, light and juicy cake that, in addition to plums, you can prepare with other, soft, seasonal fruits. I love these upside-down cakes because they are easy and fast to make.

This is the type of cake that may not win you over with looks, but it should definitely be given a chance, I believe it will surprise you.

The cake is great, tasty and juicy, so even if you don’t have any kind of nuts on hand, don’t give up making the cake, just add some more flour or chocolate powder.

Ingredients: (for 24 cm round pan)

  1. 500 g plum (3,3 cups or 18 oz)
  2. 50 g butter (0,23 cup)
  3. 80 g brown sugar (light muscovado) (0,4 cup)
  4. 1 tablespoon water

For the cake batter:

  1. 120 g butter (room temperature) (0,56 cup)
  2. 120 g sugar (0,6 cup)
  3. 1 egg
  4. 150 ml yogurt (0,6 cup)
  5. 180 g flour (1,27 cups)
  6. 2-3 tablespoons ground nuts (I used almond flour)
  7. ½ teaspoon cinnamon
  8. 1 teaspoon baking powder
  9. pinch of salt


  1. Wash plums, halve and remove the pits.
  2. Melt butter and sugar in a pan, add a tablespoon of water and stir over moderate heat for a few minutes. Pour the mixture into a round baking pan (or cake mold, but then cover the mold with baking paper) and arrange the prepared plums at the bottom by turning the cut section down.
  3. Preheat the oven to 180°C. (356°F)
  4. In the pan, mix the dry ingredients – flour, salt, baking powder, ground nuts and cinnamon.
  5. In another bowl, mix butter and sugar with a mixer, when is combined add the egg and stir briefly, then add the yogurt. Finally, add the prepared dry ingredients. Carefully spread this mixture over the plums, flatten and place in a preheated oven.
  6. Bake for 30-40 minutes at 180°C. (356°F)
  7. Remove from the oven and immediately knife along the edge of the baking pan. After 15 minutes, place a large serving plate over the cake pan and flip the cake over the plate. Serve with whipped cream or ice cream if desired.
