Cheesecake with raspberries that melts in your mouth

Cheesecake is one of my favorite cakes because of its taste and easy preparation. It also leaves a lot of room for imagination and combining with a variety of fruits.

This time I upgraded the recipe for a plain cheesecake by putting a layer of raspberry jelly in, and you can replace the raspberries with some other fruit or just make a plain cheesecake if you want.

Raspberry jelly

Ingredients:

  1. 200 g of frozen raspberries
  2. 6 tablespoons of sugar
  3. 200 ml of water
  4. 1.5 bags of vanilla pudding

Preparation:

  1. Put raspberries in a pot, add 3 tablespoons of sugar and pour 200 ml of water
  2. Mix the pudding with another 3 tablespoons of sugar and 9 tablespoons of water
  3. Heat the raspberries with water to boiling and stir in the pudding
  4. Stir on the fire for another 1-2 minutes until the mixture thickens
  5. Pour into an 18 cm diameter mold *
  6. Let it cool for at least a couple of hours, and you can leave it overnight

* If you don’t want to be seen from the outside, work in a mold smaller than the one in which you will make the rest of the cake

Biscuit base:

Ingredients:

  1. 350 g biscuits
  2. 150 g of margarine
  3. 2 teaspoons cinnamon

Preparation:

  1. Grind the biscuits, add the cinnamon and previously melted butter
  2. Mix everything well
  3. Place the mixture in a 20 cm diameter mold and press it evenly
    1. bake for 5 minutes at 200 ° C

Cheese cream:

Ingredients:

  1. 500 g cream cheese
  2. 500 ml of whipped cream
  3. 5 tablespoons powdered sugar
  4. 2 vanilla sugars
  5. lemon zest

Preparation:

  1. Mix cheese with powdered sugar (you can add sugar more or less depending on your taste), add lemon zest and vanilla sugar
  2. Add pre-mixed whipped cream
  3. Mix everything together

Put everything together:

  1. Place half of the cream cheese on the biscuit base
  2. Carefully transfer the previously cooled raspberry jelly to the cream and spread with the other half of the cream
  3. Cool before serving
