A healthier version of the popular zucchini dish

Zucchini fritters or donuts are a well-known dish that has zucchini, flour, eggs and salt in its basic version. Due to the mild taste of zucchini, you can add various spices to this mixture, but also cheese, ham, prosciutto…In order for this simple and many favorite light dish to be consumed without any problems, and if you pay attention to your diet, today I bring you a healthier version that instead of frying in oil, simply put in the oven and replace the white flour with spelt flour.

Ingredients:

  1. 70 dkg grated zucchini
  2. 20 dkg of spelt flour
  3. 2 eggs
  4. 10 dkg mozzarella
  5. salt, pepper if desired

Preparation:

  1. Grate the zucchini, add salt and let it sit for about 10 minutes to release the liquid. Drain the extra liquid.
  2. Add the eggs, flour and shredded cheese and mix everything well.
  3. Remove the mixture with a spoon and shape it into patties on baking paper and place in the oven for about 20-25 minutes at 160 degrees, or until they get a golden yellow color.
  4. Serve with salad as desired.
