
We usually eat them in the warm season because various refreshing salads are a great light meal whether it is breakfast, lunch or dinner. With vegetables as a base, you can always add rice, cereals, pasta, cooked or grilled meat to salads… Today I bring you a recipe for a cold salad of a mixture of cereals, avocados, peppers…
You need:
- 100 grams of cereal mixture (you can buy a ready-made mixture or cook the ones you like)
- 2 avocados
- 2 young onions
- 1 medium sized pepper
- 1 small cucumber
- 8 tablespoons Greek yogurt
- 3 tablespoons coconut milk
- salt
- pepper
Preparation:
Boil the cereal in salted water, strain and leave to cool. In the meantime, clean and wash the spring onions, peppers and cucumbers, then cut the spring onions and cucumbers into rings and the peppers into small pieces. Peel an avocado and cut it into thin slices. Mix yogurt and coconut milk and add cucumbers, spring onions, peppers, avocados and cereals. Add salt and pepper if desired, then mix everything slowly and serve immediately.

This is the first salad recipe I have seen that has avocado and cereal in it. It looks so good! I am saving the recipe and will be making this on the weekend! So yummy and healthy!

I love avocado but I have never thought of combining avocado and cereal as a salad…I’ll definitely give it a try!
