Dessert without baking – White carrot cake

I bring you a recipe for a delicious cake in a combination of vegetables, nuts and fruit that is prepared without baking. You can try the dessert from the raw food menu when you are looking for new gastronomic delights to enjoy, as well as to offer your friends and family a dessert to remember.


  • 7 carrots
  • 2,5 cups of almonds
  • Half a cup of flax seeds (soaked overnight)
  • 1 cup of honey
  • 1 cup of coconut flour
  • 1 cup of raisins
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon


  • 1 cup of honey
  • 1 cup of hazelnuts
  • 2 tablespoons of lemon juice
  • 1 teaspoon of vanilla extract


  1. Grind the carrot. Mix the almonds and flax seeds separately in a blender. Set aside.
  2. After mix the raisins, vanilla extract, coconut flour , cinnamon and honey in a blender.
  3. When you have a uniform mixture, add the ground nuts and flax seeds and mix a little more.
  4. Put the mixture into a cake pan lined with baking paper, flatten and refrigerate for 1 hour.
  5. Make the dressing by placing all the ingredients (for dressing) in a blender and make a creamy homogeneous mixture.
  6. Remove the cake from the mold and coat with the dressing.
  7. You can decorate the cake with whole nuts.

  1. Oh wow this look amazing! I love carrot cake 🙂 Coconut flour is great for baking, such awesome flavor and texture. I love that this is only sweetened with honey, and the raisins also give it bolder flavor I imagine. Might just have to try this!

  2. This one of those “I have to try it to believe”moments. I can’t imagine it tasting as good as carrot cake, but for a healthier version it’s worth a taste.

    1. It dose taste like carrot cake. I am very picky when it comes to that and cheese cake. This was I think 10th version of a healthier cake that I tryed and that has won over all of the rest. The coconut and raisens give a special kick to the taste. When you try it came back here and tell me what you think
