Lunch idea: zucchini stuffed with vegetables and quinoa

Would you prepare something light, tasty and fresh vegetables today?

Then stuffed zucchini are the right choice for you.

I bring my favorite dish in combination with peppers, tomatoes, spinach and aromatic beets, which goes equally well not only as lunch, but also as a delicious dinner.

The abundance of nutrients and healthy ingredients will provide your body with the necessary doses of vitamins, minerals and fiber, while your palate will enjoy the intertwined aromas and flavors brought by vegetables and spices.

You can also prepare this on the grill or grill pan.

Ingredients:

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 1 fresh red pepper, cut into small pieces
  4. 2 tomatoes, cut into small pieces
  5. 6 zucchini
  6. 1 cup fresh spinach, sliced
  7. 1 cup cooked quinoa
  8. 4 fresh basil leaves
  9. fresh thyme
  10. 1 tablespoon grated Parmesan (optional)
  11. 2 mozzarella cheeses, grated (optional)
  12. salt and pepper – as desired

Preparation:

  1. In a frying pan, fry the onions and peppers in oil until soft.
  2. Meanwhile, cut the zucchini in half lengthwise and clean them with a spoon. Save the pieces you cleaned for stuffing.
  3. Add sliced tomatoes, zucchini, thyme leaves to the onion and pepper and season with salt and pepper. Saute for a few more minutes. Add the spinach and stir until softened.
  4. Remove the pan from the heat, add the cooked quinoa and chopped basil, Parmesan (optional) to the mixture, stir and set aside.
  5. Preheat oven to 190 degrees.
  6. Fill the zucchini with the stuffing and bake for 40 minutes in the oven, on baking paper.
  7. Do not put the mozzarella immediately, but after 30 minutes of baking.
  8. Serve warm.
